Cheese muffins – a great savory muffin recipe!

So basically, these muffins are every cheese lover’s dream come true.

Take a deep breath and you’ll get a whiff of buttery, garlicky goodness mingling with that unmistakable smell of melty cheese.

Take a good look and you’ll feel the heat coming from these freshly baked muffins.

The top one has your name written on it. Keep on going. I saved it for you!

OK, the technology hasn’t advanced enough yet for me to deliver freshly baked cheese muffins to you through a screen.

But fortunately, only 10 minutes of effort is all that separates you from a new batch!

These cheesy muffins are absolutely amazing as is, and that’s how I make them most of the time.

That said, it’s a sensational base for all kinds of supplements. Imagine the possibilities! I used sun dried tomatoes, olives and feta in the photo below. Try mushrooms, spinach, zucchini (grated and squeezed out excess liquid), BACON, ham, chorizo, and even cooked chicken. You could really turn these savory muffins into a mini meal!

I’ve added a few more suggestions in the recipe notes – basically just add 1 1/4 to 1 1/2 cups of whatever you like.

Give me any combination of cheese, garlic, butter, and bread, and it’s over. It’s almost disturbing that I have not one, but FIVE versions of garlic bread in various forms on this blog:

Cheese Savory Muffins

Servings11 muffins

Video recipe above. They taste like garlic bread and cheese – in muffin form! If you want nice tall domes like the picture, that makes 11 muffins. It’s annoying, I know, but such is life. See notes for add-on options!

Instructions

  • Preheat the oven to 180 C/350 F (standard) or 160 C/320 F (fan).

  • Place the butter and garlic in a microwave safe bowl and melt in 30 second increments. To mix together.

  • Generously brush a standard 12-hole muffin pan with butter, making sure to brush with garlic. Reserve a little butter to brush the top.

  • Whisk the dry ingredients in a bowl.

  • Whisk the wet ingredients in a separate bowl.

  • Pour Wet into the bowl of dry ingredients. Mix 8 times. Add cheese, mixing as few times as possible just to incorporate remaining flour chunks – no more than 7 large mixes (secret of soft muffs).

  • Divide between 11 holes in the muffin (I use an ice cream scoop). The batter should be thick and fill the muffin tin all the way to the top (if shaped like a ball from the shovel, leave as is). See the video.

  • Bake for 22 to 25 minutes or until muffins are golden brown and crispy and spring back when touched in the center.

  • Remove to a cooling rack, brush with the remaining butter (microwave again if needed) and let cool slightly before sticking in!

Recipe Notes:

1. I usually use grated Cheddar or Tasty Cheese (common in Australia). Any flavored cheese will be great here, as long as it melts. Avoid mozzarella – it doesn’t have enough flavor.
2. Baking soda gives these muffins a boost with the rise so you get a nice dome BUT if you don’t have it, you can use an extra 2 1/2 tsp baking powder instead . OR use self-rising flour instead of regular flour and no baking powder or baking soda.
3. Can substitute with 1 tbsp dried parsley or 1 1/2 tsp stronger dried herbs (thyme, oregano, mixed herbs, basil), or just skip. Still a great flavor sans!
4. These stay fresh for 2-3 days in an airtight container. Best served hot. These can also be frozen for 2-3 months.
5. As always with baking recipes, I made them using Australian cups (metric measurements used by most countries including Europe, New Zealand) as well as US cups. I actually made them while I was in LA at a friend’s house and they came out just like they do when I made them at home!
6. Add-on options: Up to 1 1/2 cups of your choice of mixes, add to cheese. Sun-dried tomatoes, chopped or large chunks of feta, chopped olives, ham, cooked bacon, grated zucchini (salt, let stand 20 minutes then squeeze out excess water), grated carrots, chopped spinach, bell peppers/peppers (cooked ). Slices of cooked mushrooms, cooked chorizo, even ground chicken. Let your imagination run wild! Makes 12 high dome muffins or 13-14 tender muffins.
7. Nutrition per muffin, thoroughly according to the recipe. Skip the butter and cut it down to 248 calories each.

He is at home! The first thing I thought when I saw his shaved leg was “Yesiii!!!! 25% less fur loss throughout the house!” 😂

But seriously, he’s doing great. Zoned for most of the day.

I love that harness he was sent home with. And Dozer too – just that little nudge to get him back on his feet and hobble out to the toilet. This is the most action it’s going to get for a while!!
