Simple shouldn’t mean bland – and this chicken curry recipe puts it out of the ordinary! A sweet and creamy coconut curry sauce made with just 5 ingredients (from scratch!), it’s so good for something so quick you’ll be amazed.

If you want to go all out, serve it with fluffy yeast-free flatbreads to thin out the sauce (it’s basically naan, but much easier to make!)

Curries are renowned for their long lists of ingredients resulting in richly spiced sauces and punchy flavors. And while we all wish we could whip up a Tikka Masala and butter chicken from scratch whenever the mood strikes, that’s just not viable.

So today I share the best SIMPLE chicken curry I’ve ever had. This recipe is a western style curry – it is not a traditional Indian curry, Thai curry, or any other cuisine. And here’s why you’ll love it as much as I do:

  • (Very) short list of ingredients

  • Curry powder is the only spice you need

  • Creamy curry sauce with mild coconut flavor

  • 30 minute recipe – from zero!

This chicken curry is the perfect way to get your curry fix without being in the kitchen all day!

What you need for Everyday Chicken Curry

Here’s what goes into this everyday chicken curry.

  • curry powder – the only spice you need! Any brand is good here.

  • Garlic, ginger and onion – the fresh herbs add a touch of flavor that makes all the difference with quick curries! It’s the same when you quickly make Thai green curry or red curry using store-bought paste.

  • Broth/chicken broth AND coconut milk – for smoothness and flavor. We just use 1 cup of coconut milk here – it’s not meant to be an overly rich and heavy coconut sauce.

  • Chicken – thighs are best because this curry needs to be simmered for 12 minutes for the flavors to develop. But yes it can be made with breast – but the steps need to be tweaked otherwise you will complain that the chicken is dry!!

  • Peas – optional! Try other diced vegetables!

  • Coriander/cilantro – nice freshness and flavor boost. Those who hate cilantro – use chives or green onions instead.

Don’t let the short ingredient list fool you. The curry sauce is so good!

How to do it

There is nothing revolutionary about the making of this chicken curry. The only key step is to fry the curry powder. It brightens up the spice flavor + creates more golden bits on the base of the pan, and both of those things add more flavor in the curry sauce!

So don’t skip this step. 🙂

How to make easy chicken curry

Make it your own!

This recipe is for curry sauce, so it’s very versatile in terms of what you can put in it, as well as additional additions. Here are some options:

  • Other protein or vegetarian – do it with beef, lamb, pork, turkey, shrimp, fish or vegetarian dishes. See instructions in recipe notes;

  • Make it SPICY! It’s not a spicy curry. So to add heat, use HOT curry powder, or add cayenne pepper or ground chili powder;

  • make richer – use coconut cream instead of milk. Or use more coconut milk and simmer to reduce longer; and

  • Add the tomato paste to slightly thicken the sauce and give it a darker color. Use about 1.5 tbsp.

Try this curry with green bean salad, my friend JP’s famous iceberg lettuce salad, or this no-mayo coleslaw.

Serve it over rice, or even mashed potatoes or noodles. Basically anything that can be drizzled with that coconut curry sauce! ~Nagi x

Easy Chicken Curry

Video recipe above. It’s a western style curry, and it’s the easiest chicken curry I know of with the fewest ingredients possible without sacrificing taste! Very mild, not spicy at all (assuming the curry powder is mild).


  • Heat the oil in a skillet over medium-high heat. Cook the garlic, ginger and onion for 3 minutes until the onion is translucent.

  • Add the chicken and cook until it turns from pink to white.

  • Add the curry powder and cook for 2 minutes.

  • Add coconut milk and chicken broth. Stir, reduce heat to medium and cook, simmering rapidly, for 10 minutes until sauce reduces and thickens.

  • Add peas and salt. Cook for another 2 minutes, then taste to see if more salt is needed. Garnish with cilantro.

  • Serve over rice, noodles or mashed potatoes!

Recipe Notes:

1. Chicken -the boneless skinless thigh is the best because it remains juicy even after the required simmering time.

  • Chicken breast – sprinkle with 2 teaspoons additional curry powder plus a pinch of salt and pepper. Sear first in a little oil then remove (no need to cook). Follow the recipe – fry the curry with just the onion. Return the breast to the end of the simmering sauce, just to finish cooking.
  • Prawns/prawns or pieces of fish – as above with chest.
  • Other proteins (beef, turkey, lamb, pork) – use a quick-cooking, tender, juicy cut, sliced ​​or diced. Follow the chicken breast steps.
  • Vegetables – add to sauce depending on cooking time.

2. Curry powder – any brand is fine, I use Clives and Keens. Use Mild for not spicy, Hot for spicy! Note: different brands have different saltiness, so taste the sauce at the end to see if it needs more salt.
3. Coconut milk – Whole fat has a better coconut flavor and is creamier. The light is ok but add 2 teaspoons of cornstarch mixed with a little water (to thicken the sauce slightly).
